Traveler Test Kitchen – Coffee Cup Chilaquiles
We’ve decided to test out some creative, easy-to-prepare recipes in the kitchen of our home office to see if we recommend them for our travelers. We’ll feature a new recipe each month that we’ve prepared in our very limited kitchen and had our employees test and rate. We’ll also show you unedited photos of how our food turned out, so you can compare our real-world versions to the ultra-fancy food blogs where we got the recipes.
What will my kitchen be like? Our housing department will give you as much information on vetted properties, or provide furnished housing. For health care travelers, there’s always that touch of unknown going into an assignment. Easy recipes for busy travelers — we’ve got you covered, whatever size kitchen.
Coffee Cup Chilaquiles

Ingredients:
1 egg
1 tablespoon milk
Salt and pepper
1 tablespoon sharp cheddar cheese
5 tortilla chips, divided
1 tablespoon salsa
Sour cream
Queso fresco
Chopped green onion
Equipment:
Coffee cup
Measuring spoons
Fork for mixing
Instructions:
Beat the egg and milk with a fork in the coffee cup. Add salt and pepper to taste. Break 3 or 4 of the tortilla chips into small pieces to fit into the cup and stir into the mixture. Add 1 tablespoon salsa.
Microwave on high until done, about 1 minute and 10 seconds. Garnish with remaining tortilla chips, sour cream, queso fresco and green onion.
